Aloo baingan
Hi, it is my second post. Today it is going to be a North Indian dish. Y likes it very much. It tastes good with chappathis and white rice.I never imagined that u could cook such a beautiful dish with aaloo.Here in kerala we never use much potatoes .We dont have any signature dishes with potato.
Ingrediets
potatoes 3 nos diced or cut into pieces ( not very small pieces)
baingan(brinjal) 2 (I used the violet one) cut it same as the aaloo
turmeric powder 1/4 tea spoon
cumin seeds 1/4 tea spoon
green chilles 3 or 4
red chilli powder 1/4 spoon(optional)
oil 1 table spoon
salt to taste
cilantro leaves finely chopped (as much as u like)
coriander powder 1/4 teaspoon
chat masala/ amchur 1/4 spoon
Heat oil in kadai.Do the thadka(seasoning) with cumin seeds,turmeric powder.Then add all the powders.Saute it till the raw smell is gone. Add the potatoes,baingan,salt.Cook it on low flame. U can sprinkle some water if needed. After half done u can add the green chillies. When the poatatoes & the baingan is cooked ( it becomes very soft) u can add the finely chopped cilantros and serve .
