In our traditional sadhyas there is one simple curry .-koottukari.With only two types of vegetables u can make it-raw banana&yam( chena).U need a lot of coconut for this curry. But it is simply delicious.This cannot be used as a main dish. But it is a good side dish.
Ingredients
raw banana 1 cut into small cubes)
yam 1cup( cut into small cubes)
black channa(kadala) 1/2cup(soaked overnight&pressure cooked till soft)
coconut 2 cups
turmeric powder a little
chilli powder 1 teaspoon
salt to taste.
cumin seeds 1 teaspoon
Cook the vegetables with turmeric powder. Add the black channa. then add the salt. Meanwhile grind the coconut (1 cup) with cumin seeds,chilli powder to a smooth paste. Add this paste to the cooked vegetables..
when the coconut is done , switch off the flame.
For tempering
mustard seeds 1teaspoon
red chiilies(dry) 2 or 3
urad dal 1 teaspoon
curry leaves as much as u like
Heat oil in a cheenachatti..splutter the mustard seeds,add red chillies,urad dal. when the dal becomes brown,add the remaining grated coconut. Continue stirring it till the coconut becomes brown in colour..Then add lots of curry leaves.Add this mixture to our curry.Delicious koottu curry is ready.
